I developed this recipe yesterday.
Thought I’d pass it along.
A sauce for all seasons (with appropriate variations)
This is for a simple, slow-roasted chicken.
The slow-roast process holds the juices inside the bird, making a much juicier meat but no drippings or burnt chicken pieces for a roasting pan gravy.
Here’s the recipe.
SAUCE FOR ROAST CHICKEN
In a small sauce pot add:
1TB each, fresh parsley, fresh basil
2oz shallots, net of skin, medium chop
touch of salt and freshly-ground pepper
1TB goose fat
Soften the shallots with the above ingredients.
Add:
½ cup dry white wine
1 cup chicken stock, home-made only
Reduce to ½ cup
Add 1TB cold roux and whisk in.
Add 1TB fresh lemon juice
Garnish:
Finely chop a gremolata of
1TB each: fresh parsley and fresh basil plus
1t lemon zest
Sprinkle over sauced chicken.
Yummy.

As in all green salad dressings, be parsimonious in the use of vinegar.

Dinner Monday was a spur of the moment trip to the Four Seasons’ Bristol Lounge where my favorite burger lay.
I opened the menu to discover that that $24.00 burger was now $34.00.
That the ingredients had changed from beef to a combo of beef, pork, and lamb.
In for a penny…
Ultimately, it was as good as ever.
I paid the bill without looking at the damage.
